Chemometrics in Food Research

Concept
It is common in food research to make several or many measurements on a set of samples (e.g. multiple peaks in chromatography, measurements at numerous wavelengths in spectroscopy or multiple laboratory analyses). This approach is needed because food chemical, physical, and sensory properties and their perceptions are clearly multivariate in nature. Chemometrics is the application of statistical experiment design and good measurement principles to acquire data that is analyzed by empirical multivariate mathematical and statistical methods. This approach focuses on the most useful and meaningful information. It is particularly applicable to analysis of large data sets (exploratory data analysis); for identifying unknown samples, detecting adulteration or performing multivariate QA/QC (pattern recognition); or for constructing mathematical models that describe the behavior of a system (which may be a unit operation, an entire process, properties of a food product, or an analytical method). Such models can be used to improve understanding and to optimize performance.

The purpose of this symposium is to bring together scientists to discuss applications of chemometrics in food research including examples from chemical, microbiological and sensory observations.
