Chemical indexes of wine quality.

Alcohol, sugar, acid, pH and phenols have been used as indicators of wine quality for many years. The degree to which these measurements predict quality is sometimes satisfactory but never complete. Recent advances in chemical analysis have produced measurements of increased complexity and greater sensitivity. Unfortunately, the subtle differences observed between wines have chemical causes that are still mostly unknown. In this paper we discuss the chemical measurements of wine that are most commonly used to predict quality and describe a technique known as 'charm' which may yield new indices of quality.
