Characterization of non-volatile precursors of beta damascenone in grapes using charm analysis.

A bioassay for the precursors of beta-damascenone was developed utilizing the analysis of beta-damascenone charm in Freon 113 extracts. Charm is a measure of the amount of an odor-active compound divided by its odor detection threshold in a gas chromatographic effluent. Less than 50 fermtograms of beta-damascenone was detected from separation schemes using less than 1g of grapes. Several schemes for the isolation of the non-volatile beta-damascenone precursors in grapes were examined. The structural implications these methods provided will be discussed.
