The evolution of some odor-active volatiles during the maturation and ripening of apples on the tree.

Twenty odor-active volatiles (18 esters and 2 aldehydes) were analyzed during the maturation and ripening of 'McIntosh' and 'Cortland' apples on the tree. Twelve volatiles evolved and showed 5 patterns of changes. Most of the important odor-active volatiles were not produced until the later stages of maturation and ripening, and their prodn. followed the autocatalytic evolution of internal ethylene. Preharvest application of the growth regulator, daminozide, at 1000 ppm delayed the prodn. of 5 volatiles in the same manner it delayed fruit ripening.
