Flavor release analysis using a retronasal aroma simulator,
A device which simulates release of aroma compounds in the mouth, a retronasal aroma simulator, was constructed and tested. The simulator consists of a purge-and-trap device made from a 1-l blender to which synthetic saliva is added. Temp. is regulated to 37 degree C and blending is used at a shear rate equivalent to that occurring during eating. Volatiles are collected on a silica trap or sampled with a syringe and analysed by GC with flame ionization detection, GC-MS and GC-olfactometry. The simulator was used to investigate effects of food components on flavour release. [From En summ.]
