   Program Overview

In support of our outreach mission, the Enology Extension Laboratory focuses on research projects designed to help regional and small-scale wineries fine-tune wine quality and enhance production efficiency.   Areas of interest include optimizing processing methods and the effective use of enological additions and other tools for stylistic expression.  Long-term projects include defining typicity of regional wine styles, with initial work in Finger Lakes Riesling, and optimizing nano-scale fermentation.  The Lab also supports Cornell’s grape breeding program in the evaluation of the enological viability of new winegrape cultivars and optimization of winemaking protocol for new regional varieties.

60% Extension, 40% Research.  Duties include analysis and consultation for the NY wine industry, design and execution of workshops, seminars, and symposia on wine production and analysis; oversight of the NY wine analysis lab; design and execution of research exploring grape cultivar selection, viticultural impacts on wine quality, optimal winegrape processing, wine characterization, flavor, or sensory chemistry; supervision of graduate and undergraduate student research.

2001-2008

Enology Project Leader, Senior Research Fellow

Development of new Enology Project. Duties included design and execution of research to evaluate new grape cultivars for enological viability, optimal processing, and component characterization; regional outreach, including analysis and consultation, design and execution of shortcourses and workshops covering wine production and analysis; and promotion and representation of Enology Project at national, state and regional events.
